A Hokkaido Ramen specialist restaurant will open in Leederville

The cozy 30 seats will serve a unique Ramen based on curry and miso together with Hokkaido Soul Food Favorites and local drinks.
Shimokitazawa, a Bohémien neighborhood that is an easy lap by local four stations from Shibuya’s chaos, is one of my favorite parts of Tokyo.
It is a paradise for the shopping of vintage clothes; It hosts independent theaters and cinemas; And it has one of the most dense concentrations in the world of record shops in a single area.
Best of All: Every Square Metre of Shimokitazawa, Like Seemingly Every Major Urban Pocket of Japan, Boasts Multiples Restaurant, Bars, Cafes and Carts Servings Delicious Things to Eat and Drink, From Rowdy Seafood-Centric Izakaya Nishinba, To Unique, Only-In-Japan Offerings a The Specialist Curry Houses Whose Obsession With Spice Carries Over to Dessert: Chocolate and Sichuan Peper Gelato, Anyone?
Next week a small piece of Shimokitazawa arrives in Perth when the Tokyo Spice Ramen Ten restaurant and Sen opens its first Australian outpost in Leederville. But while Ten and Sen could have an address in the Japanese capital, his heart is located about 1200 km away in Hokkaido, the second largest of the main islands in Japan and the largest and most northern prefecture in the country.
Hokkaido is also the house of Nobukazu Muraki: the chef who introduced Perth to the Hokkaido -style curry Curry through the opening of Rojiura’s 2023
Curry Samurai in Shafto Lane. With the decision to open restaurant number two,
Muraki is doubling his commitment to flavors and traditions
hometown.
“I want this to be a real celebration of Hokkaido,” says Muraki.
As the name of the restaurant suggests, Ramen will be a fundamental part of the offer of ten and sen. What does not tell you, however, is that the house of the house is not based on a single set of projects: it merges elements of different regional styles to create something new, but it is still very made in Hokkaido.
So, while Miso’s mixture in the base of the soup comes across the legendary of Hokkaido
Sapor’s style ramen, the use of curry spice is a nod to the wall in the wall style: a
Relatively recent creation that takes its name from the city of southern Hokkaido in which it originated.
The wavy noodles of medium length eggs are designed to cling to multiple broths while the seasonings include all e-if vegetables are chosen the “special” bowl -the different types of braato chashu. A vegan bowl that uses rice spaghetti instead of the standard emission eggs noodles ensures that vegetable -based eaters are not excluded.
Ramen, however, is just a part of the history of Hokkaido’s food. And traditions.
“This is, of course, a Ramen restaurant, but originally, Hokkaido restaurants served Hokkaido Ramen and other Hokkaido dishes,” says Muraki.
These favors in depth include Zangi (the version of the island of the omnipresent fried chicken of Japanese karaage that introduces some other ingredients in the marinade of the meat); Fried broccoli with garlic; And peeled tomatoes marinated in Dashi – An example of the seasonal contours that will have changed monthly.
In addition to the beers of Dingo Brewerry, the selection of drinks is a snapshot of whiskey, beer producers and Sapporo Sake houses.
To ensure that the Australian Office of Ten and sen adheres to the same standards as
Original, Keijiro Hasui and Amu Hayashii-President of the Mother and Chef of Sen in the Tokyo-Sono restaurant in Perth for the launch with Hayashi who plans to stay after opening to manage off-road vehicle.
The influence of Hasui, meanwhile, can be seen in the handmade tables and in
Red brick interior of the 30 -seater dining room on which he and Maruki started working since they took control of this one -off hamburger at the end of 2024. (That shade of green forest that painted the doors in safe is hit, isn’t it?))
Of course, even flagship Leederville does not keep a candle in Tokyo. (Once again, how many fences or cities can? The largest metropolis in the world is a difficult act to follow.) However, with a high-level address close to the lively Nexus in Newcastle-E-Oxford Street, Ten and Sen should find a receptive audience among passers-by, no less since it will initially exchange seven days.
It talks about making a good impression on the rest of the neighborhood.
Spice Ramen Ten and Sen (747 Newcastle Street, Leederville) will open on Monday March 31st and lunch and dinner is needed every day.
