Ahana Dutt wants to show Sydneysiders that there is more in Indian cuisine than in the chicken with butter. Former Chef Raja and Firedoor is approaching the kitchen at the Plate It Forward Enterprise Eatery Kolkata Social in Newtown.
Instead of Naan, there is Radhallobhi, a rubbery fried focaccia with a filling of lentils and crunchy edges. In Calcutta, Barramundi, known as Bhetki or Asian Seabass, is popular. Dutt has included a smoked version on his menu, fried in mustard oil and served with yogurt, cardamom and green chillies. The Indian pound cake in the dessert menu is a Dutt family recipe, which is updated with saffron cream and seasonal fruit.
