Procedure

Rinse the chicken pieces well, removing any residues of pens and oily parts in excess.

Clean and cut the artichokes into slices by soaking them in a bowl with cold water acidulated with the juice of a lemon for about a quarter of an hour. Then remove them from the water and slop them for about 3 minutes in boiling water acidulated with the juice of another lemon. Drain them and leave them aside, keeping the cooking water in another bowl.

Peel and cut the onion into slices and brown it with the oil in a large pan.

Then add the diced bacon and brown it for a couple of minutes.

At this point, arrange the chicken pieces in the pot and brown them evenly.

Season with salt and pepper and blend with the dry white wine. Add half a glass of the cooking water of the artichokes in which you will have melted 1/2 spoonful of flour.

Cover and cook for about 35 minutes, checking that the cooking bottom does not dry out too much. In this case, add a ladle of artichoke cooking water.

Add the pieces and the remaining filtered lemon juice in the pan, close and cook for another 10 minutes or until the artichokes have become tender.
