“The adventure began by chance,” says Jacopo Corona, one of the founders. «The Coal supermarket chain, rooted in central Italy, has contacted us in December. At the beginning they had an ambitious project, gourmet – a high -end format inspired by the first Eataly -, born in 2021, but which had not taken off as hoped for. The decision was made: closing at the end of 2024. But a twist changed everything. Someone on the Board of Directors had the intuition to contact us, proposing to transform that space – 450 square meters dedicated to sale – into something new. We accepted the challenge, fascinated by the idea of ​​creating a meeting point between large retailers and neighborhood shop. The shelves remained, but a central button is added: A bar, a gastronomy corner for fast lunches and an area dedicated to aperitifs. The butcher meat instead gave way to a Didactic laboratory, where we organize inclusive and open cooking courses to allin collaboration with the realities of the territory “.

The new way of shopping

Here you come to meet, in short, drink and eat something, shop. “Ours is a project that goes beyond simple sale,” confirms Corona. «It is a place of sharing. We have created an inclusive environment, where part of the staff is made up of people with disabilitiesBecause we believe in the value of the collective company and in the strength of the community. And at the heart of everything there is cooperation: we, pastry, are a social cooperative; While Coal is a large -scale distribution cooperative.
