Described by Anthony Bourdain as “perfectly positioned to conquer the hearts and minds of the world”, Sisig is a Filipino dish that involves a rich mixture of pork (usually the cheeks, muzzle and ears) fried with chilli, onions and vinegar. Served by sizzling on a cast iron plate for a caramelized caramel, its deep and games flavors are balanced by a silky fried egg and Calamansi juice (a fruit of citrus fruits from the Philippines).
While this is how it is served in most Filipinian restaurants, Mrs Parks Kitchen leaves the egg and offers an authentic Kapampangan version with roast pork and chicken liver, which adds a creaminess to the spicy and spicy dish.
There are also dishes such as Kare Kare (beef stew in peanut sauce), as well as skewers of pork with sweet and spicy grilled and desserts such as the Leche custard cake and the cloak cake.
